Friday: Apple Crisps

Thursday: Restaurant Style Hummus

3 tablespoons lemon juice

¼ cup water

6 tablespoons tahini (sesame seed butter)

2 tablespoons olive oil

1 (14 ounce can of chick peas (garbanzo beans) or 2/3 cup dried

1 small garlic clove

½ teaspoon salt

¼ teaspoon dried cumin pinch of cayenne

1 tablespoon minced cilantro

Equipment

Instructions

1) If using dried chick peas, Soak the chick peas in water with baking soda for 8 hours. Drain and rinse. Place chick peas in a pot, cover with water, bring to a boil, simmer, and cook until softened (about 2 hours). Rinse. Note can save extra chick peas in freezer.

2) Prepare the ingredients. Squeeze 1-2 lemons. Remove skin from garlic clove.

3) Combine water and lemon juice in a small bowl.

4) Whisk together tahini and 2 tablespoons oil in separate small bowl.

5) In a food processor, mix together chick peas, cumin, garlic, salt and cayenne until well ground, scraping down sides several times.

6) With food processor running add lemon/water mixture through feed tube in a steady stream. Scrape down sides.

7) With the food processor running, put tahini/oil mixture through the feed tube. Process until smooth and creamy.

8) Garnish with cilantro. Serve with pita chips or pita bread.

Tuesday : Hamburgers and Roasted Potatoes


Hamburger Recipe

¼ pound ground beef

salt and pepper

hamburger bun

Condiment Options: Ketchup, Mustard, Tomato, Bacon, Lettuce, Cheese, Avocado, Sauce (3 tablespoons mayonnaise and 1 ½ tablespoon ketchup, ½ teaspoon garlic powder optional)

 

EQUIPMENT

Skillet or griddle

Spatula


How to make this recipe

  1. Form hamburger patties by rolling into a ball and pressing flat to make a 14” disk. 

  2. Sprinkle on 1/16 teaspoon pepper and 1/8 teaspoon salt.

  3. Heat skillet over medium heat.

  4. Place patty in skillet.  When brown on one side, use spatula to flip over.  

  5. When browned on second side, place on hamburger bun.

  6. Top with your favorite condiments.

Notes:

  1. To toast bun, place flat side down on skillet for 1 minute

  2. To make cheeseburgers, place a slice of cheese on top of patty after the first flip

  3. To make a sauce for your condiments, mix may and ketchup together and optionally adding garlic powder.


Roasted Potatoes

1 pound potatoes

¼ cup olive oil or grapeseed oil

Salt/pepper


How to make this recipe

  1. Preheat oven to 400-450 degrees.

  2. Chop potatoes into cube shape or french fry shape

  3. Coat potatoes with olive oil. Toss with salt and pepper

  4. Place potatoes in a single layer on a baking sheet

  5. When the side on the baking sheet is browned, turn over and brown the other side. Total cooking time is about 20-30 minutes.

  6. Serve.


Notes

  1. Sprinkle with truffle salt or truffle oil before serving for added deliciousness.
